Shanghai Shrimp Noodles
Seasoning Sauce:
- 1 oz soy sauce
½ tsp sugar
1 oz oyster sauce
Ingredients
- ½ lb fresh Shanghai noodles
2 oz bean sprout
1 stalk green onion
1 red onion
1 carrot
3 shiitake mushroom
1 oz garlic
1 tsp cornstarch
1 egg
½ lb prawn (13-15 per lb)
3 oz vegetable oil
3 oz water
Preparation
- Add noodle to boiling water and cook for 7 minutes
Cut green onion into 2 inch long strips
julienne cut carrot
Mince the garlic
Cut shiitake mushroom into strips
Break the egg and keep the egg white
Clean and devein the prawns
Marinade prawns with cornstarch and egg white
Stir-fry
- Heat a pan over high heat, add vegetable oil, add garlic and cook until lightly brown, add prawns and stir-fry until lightly cooked. Add noodles, water, soy sauce, oyster sauce and sugar and cook until the liquid is reduced. Add in the bean sprouts, onions, shiitake mushroom and carrot, mix well and stir-fry until vegetables are lightly done. Transfer to serving plates and enjoy.
