Chocolate Brownie Bites with Wasabi Granache

Chocolate-Wasabi Frosting

    Ingredients:
    3 cup sugar
    1/3 cup corn syrup
    3/4 cup half & half
    1/2 cup heavy cream
    1/8 tsp. Salt

    9 oz. Chocolate
    2 oz. Butter
    1/8 cup fresh grated wasabi

    Method:

    1. Boil the sugar, corn syrup, half & half, heavy cream and salt for one minute.
    2. Add the chocolate, butter and fresh grated wasabi and paddle for several minutes in a Kitchen Aid.
    3. Allow the frosting to cool before piping.

Brownies

    Ingredients:
    1#12 oz. chocolate
    9 oz. butter

    2 1/2 cup sugar
    6 eggs

    2 Tbsp. vanilla

    2 1/4 cup A.P. flour
    ¼ cup cocoa powder
    ¼ tsp. salt
    ½ tsp. baking soda
    ¼ tsp. baking powder

    Method:

    1. Melt together and cool the chocolate and butter.
    2. Whip eggs, sugar and vanilla on high speed until tripled in volume.
    3. Add in the sifted dry ingredients, then add the chocolate.
    4. Spread onto a greased ½ sheet pan.
    5. Bake in 350 oven for 20-25 minutes or until baked through.
    6. Cool, cut and frost.

Yuzu Key Lime Pie

Use any recipe for key lime pie

  • Substitute yuzu juice for lime juice, using only ½ the amount (note it is stronger than lime juice)
  • Bake per recipe's instructions
  • Cover with crushed graham crackers
  • Finish with marshmallows
  • Add diced pineapple
  • For Color and decoration sprinkle basil chiffonade

    Ingredients:

  • Yuzu juice
  • Graham crackers
  • Marshmallows
  • Sliced pineapples
  • Basil Leafs
