Easy crab Louis salad

Divine crab Louis salad! Joining us with an easy recipe is the executive chef and partner of Sam's Chowder House in Half Moon Bay, Lewis Rossman.

Executive Chef Lewis Rossman's Dungeness Crab Louis Salad

    Dressing Ingredients:
    Cocktail Sauce
    Mayonnaise
    Green Onion
    Half and Half

    Method:
    The dressing is a 5:1 ratio of mayonnaise to cocktail sauce (amount varies on how many people you are serving). At Sam's we make our own cocktail sauce but to save time at home, you can use your favorite cocktail sauce and mayonnaise -- this works just fine. Add a sprinkling of green onion and a dash of half and half to thin out the dressing.

    Salad Ingredients:
    Iceberg lettuce
    Fuji apple
    Radish
    Cucumber
    Chives
    Dungeness Crab (4oz per serving)
    Hard Cooked egg

    Method:
    Use the iceberg lettuce as a base and the other ingredients will complement the crab. Use as much or as little of any of the ingredients as you wish-dice up the ingredients and mix with the lettuce. Everything, except the crab is seasoned with salt and pepper in a mixing bowl and dressed with the dressing. The salad is then garnished with the Dungeness crab meat.
