Chocolate bomb explosion

It's a decadent explosion that will blow your mind. Jeff Amber, executive chef and owner of Gigi Restaurant in Lafayette, shares his secret recipe.

Gigi Chocolate Bomb

Cake
1 lb bitter sweet chocolate
1 lb butter unsalted
combine and melt in a double boiler
1 lb granulated sugar
once chocolate is melted whisk in until sugar is dissolved
8 whole eggs
8 yolks
Combine to chocolate and whisk over double boiler until approx. 120-130 degrees
8 oz all purpose flour
combine chocolate and egg mixture with flour and mix until smooth
1 tbsp vanilla extract
1 tsp salt
add to batter
place batter in 4 oz cupcake tin and bake at 350 for 7-8 min. leaving the center a little soft

Gigi Chocolate Sauce
1 cup water
8 oz butter
12 oz sugar
8 oz corn syrup
bring wet ingredients to a slow boil
2 oz cocoa powder
2 tbsp vanilla extract
pinch of salt
12 oz bitter sweet chocolate
add to wet ingredients and whisk until smooth
Top with a scoop of your favorite chocolate ice cream and dust with cookie crumbs
