Recipe: Fig and cherry parfait

Mat Schuster, the food and beverage manager at the San Francisco Bay Club, shares some healthy, summer desserts!

Fig and Cherry Parfaits with Cinnamon Scented Greek Yogurt

Ingredients:
12 oz. Greek yogurt
2 Tbl agave nectar
1 tsp cinnamon
1 cup fresh figs, cut into bite sized pieces
1 cup fresh cherries, pitted and cut into bite sized pieces
1 cup sliced almonds, lightly toasted

Method: In a small bowl, mix the yogurt, agave and cinnamon. Using parfait cups or wine glasses layer with one fruit, some yogurt, sliced almonds and then the other fruit, yogurt and sliced almonds. You can also sprinkle a little extra cinnamon on top.

You can also vary any fruit you like including fresh berries, grapefruit and melon.

Natural Crispy Treats

Ingredients:
4 cups Puffed Rice Cereal
1 cup peanut Butter
1 cup Rice Syrup
1 cup raw almonds

Method:
Warm the peanut butter and rice syrup in a sauce pan on medium-low heat until smooth. In a large bowl, mix cereal and almonds. Coat cereal with rice syrup and peanut butter mixture. Spray a square baking dish with non-stick spray and press the cereal mixture into the pan with a spatula. Allow to cool and cut into squares. Enjoy!
