Grilling with beer !

Beer Can Chicken

Ingredients:

  • 1 3 lb Roasting Chicken
  • 1 can 21st Amendment "Hell or High Watermelon" Beer
  • 4 cloves garlic chopped
  • 4 sprigs rosemary
  • 1/2 bunch thyme
  • 1 lemon cut in half
  • 2 tblsp paprika
  • 2 bay leaves
  • 4 tblsp olive oil
  • salt and pepper

Preparation:
Wash chicken thoroughly and pat dry . Combine all aromatics in a mixing bowl and mix well. Season chicken with salt and pepper inside and out. Remove the top of the beer can with a can opener and drink a little less than half. Place half the aromatics in the beer and the other half in the cavity of the chicken. Now place the chicken over the can carefully to not spill any of the beer. Place on a elevated rack over a sheet pan. Prop the bird so it stands up straight. Place in a preheated 375 degree oven for about 1 hr or until the internal temperature at the thigh is 180 degrees. Remove from oven and allow to sit for 5 minutes before handling. Carefully remove chicken from over can . You may now cut the chicken in 1/8's and finish on the grill basting with the left over juice in the can. Serve with grilled pancetta wrapped asparagus and Tuscan Panzanella and Heirloom tomato salad. Serves 4 - 6.
