Healthy-style mac & cheese

Executive Chef Jerry Regester from the InterContinental Restaurant at The Clement Monterey shares a recipe for a healthy version of the classic mac & cheese.

Macaroni and Cheese
Wheat Penne Pasta and Broccolini
Yield: 6 Servings

Ingedients:

  • 1 cup Heavy Cream
  • 8 oz. Cream Cheese
  • 8 oz. Cheddar Cheese
  • 8 oz. Port Salute Cheese
  • 1 cup Bread Crumbs
  • 1 lb. Wheat Penne Pasta
  • 2 bunch Broccolini

    Procedure:
    Bring a pot of water to a boil add the pasta and cook until tender, drain and reserve. Place cream in a pot and bring to a boil. Grate all your cheese and keep them separate from one another. When the cream has reached a boil turn down the heat so that the flame is very low. Add the cheese, reserving half of the cheddar cheese. Sauté the Brocolini and add to the cooked pasta, then pour the sauce over the top and mix in a bowl. Pour into a baking dish top with a sprinkle of the breadcrumbs and remaining cheddar cheese. Finally place the Mac and Cheese in the oven and bake for 20 minutes at 350°. ENJOY!
