Märzen BBQ Sauce Ribs

Ribs

  • 5 lbs baby back pork ribs, each slab cut into thirds
  • 3 (12 oz.) bottles of Gordon Biersch Märzen beer
  • 4 ½ cups water

    Sauce

  • ¼ cup oil
  • 1 large onion
  • ¼ cup chopped garlic
  • 1 qt. of you favorite BBQ sauce (Cattleman's is preferred)
  • ¼ cup molasses
  • ¼ cup pureed canned chipotle chilis
  • 1 bottle of Gordon Biersch Märzen
    Makes about 6 cups

    Misoyaki and Märzen Marinated Grilled Butterfish (or Chicken)
    Serves 6 people

  • 4 lbs butterfish (Black Cod), or 6 lbs of Chicken breasts, legs, and thighs
  • 1 lb Shiro Miso Paste (use high quality)
  • 2 bottles Gordon Biersch Märzen
  • 1 cup sugar

  • Mix miso, beer and sugar until the marinade is smooth and pourable. Cover butterfish or chicken with the marinade and refridgerate for 2 days.

  • When ready to serve, BBQ over grill at medium heat for 5 minutes per side (fish), or 20 minutes for chicken.

    About Dan Gordon:
    Co-founder of Gordon Biersch Brewing Company, he has earned a reputation as one of America's leading brewing engineers. As the director of brewing operations for Gordon Biersch, he supervises the company's state-of-the-art brewing and bottling facility in San Jose, Calif.

    Gordon is the first American in more than 50 years to graduate from the prestigious five-year brewing engineering program at the world-renowned Technical University of Munich at Weihenstephan, West Germany. Before earning his brewing engineer's degree there in 1987, he interned at Spaten Brewery in Munich and served as a technical translator at Lowenbrau Consulting.

    Gordon lives in the Bay Area with his wife, Melissa, and their three children. Gordon frequently lectures at the Stanford University School of Business, the Anderson School of Management at UCLA and the Haas School of Business at U.C. Berkeley.
