Recipe: Tunapica with cucumber salad!

The executive chef from Asia de Cuba at the Clift Hotel in San Francisco, Philip DuBose, shares a recipe for Tunapica.

Tunapica
Serves 4 people

  • 4 oz. Tuna
  • 3 Tbsp. Almond Mix
  • 2 tsp Green Olives, minced
  • 1 tsp Chives, chopped
  • 1 oz. Pica Dressing
  • 4 Each Fried Wontons
  • 1 Each Diamond Cut Banana Leaf
  • 1.5 oz. Cucumber Salad

    Pica Dressing

  • 1 Tbsp. Kikoman Soy Sauce
  • 1 Tbsp. Ginger, minced
  • 1/2 Cup Water
  • 1 Tbsp. Garlic

    Mix all ingredients together.

    Cucumber Salad

  • 1 Cucumber, thinly sliced
  • 1 Red Pepper
  • 1/4 Cup Rice Wine Vinegar
  • 1/2 Cup Honey

    Combine all ingredients and let marinate overnight.

    Almond Mix

  • 1/4 Cup Toasted Almonds
  • 1/4 Cups Currants
  • 1/2 Cup Unsweetened Coconut
