Homemade salad dressings

Chef Don Dial, owner of Rocco's Café in San Francisco, has some tasty recipes for adding pizzazz to your salads.

ROCCO'S FAMOUS HOMEMADE SALAD DRESSINGS

Rocco's Homemade Italian Dressing

INGREDIENTS:
2 Cups Extra Virgin Olive Oil
¾ Cup Red Wine Vinegar
¼ Cup Balsamic Vinegar
1 Tbsp. Chopped Garlic
1 Large Tbsp. Dijon Mustard
Big Pinch of Black Pepper
Big Pinch of Fresh Basil or Italian Parsley
Pinch of Salt
Pinch of Sugar

METHOD:
Place all ingredients in a bowl and whisp together until thoroughly mixed. Now pour your homemade dressing into an old Wine Bottle or Carafe which has been thoroughly washed and place your own label on the bottle with the date and enjoy!

Rocco's Homemade Thousand Island Dressing

INGREDIENTS:
2 Cups Mayonnaise
¾ Cup Ketchup
¼ Cup Red Wine Vinegar
¼ Cup Red Wine
1 Large Tbsp. Dijon Mustard
3 Shakes Worcestishire Sauce
1 Small Stick Finely Chopped Celery
¼ Cup Finely Chopped Red Onion
1 Pinch of Finely Chopped Italian Parsley
Big Pinch of Black Pepper
1 Large Tbsp. Sweet Relish

METHOD:
Place all ingredients in a bowl and whisp together until thoroughly mixed. Now pour your homemade dressing into an old Wine Bottle or Carafe which has been thoroughly washed and place your own label on the bottle with the date and enjoy!

Rocco's Homemade Caesar Dressing

INGREDIENTS:
2 Cups Extra Virgin Olive Oil
Less than ¼ Cup Red Wine Vinegar
1 Lemon Squeezed
1 Tsp. Anchovie Paste
3 Tbsp. Sour Cream
1 Tbsp. Chopped Garlic
1 Tbsp. Dijon Mustard
¼ Cup White Wine
Big Pinch of Black Pepper
1 Full Cup Grated Parmesan Cheese
Small Pinch of Salt
Pinch of Sugar

METHOD:
Place all ingredients in a bowl and whisp together until thoroughly mixed. Now pour your homemade dressing into an old Wine Bottle or Carafe which has been thoroughly washed and place your own label on the bottle with the date and enjoy!

Rocco's Homemade Bleu Cheese Dressing

INGREDIENTS:
1 Cup Sour Cream
1 Cup Crumbled Bleu Cheese
1 Cup Half & Half
Big Pinch of Black Pepper
Big Pinch of Dry Basil
Big Pinch Fresh Italian Parsley

METHOD:
Place all ingredients in a bowl and whisp together until thoroughly mixed. Now pour your homemade dressing into an old Wine Bottle or Carafe which has been thoroughly washed and place your own label on the bottle with the date and enjoy!

About Don Dial, Chef/Owner of Rocco's Café, South of Market
Don Dial grew up with Italian cooking in his blood. His mother was a typical Italian mom, always cooking or baking something from scratch, and both his grandfather and uncle ran successful Italian restaurants in San Francisco spanning over five decades. As a young boy, Don would spend many hours with his family rolling dough into little pillow shapes to make fresh Gnocchi pasta, picking fresh blackberries for blackberry pie, or canning peaches, pears and apples for winter.

By the age of 18, Don was ready to put this valuable experience to use and entered the restaurant business as a line cook for a very popular Italian restaurant in North Beach, quickly advancing to Night Manager. By this time, Don knew that some day he would own his own Italian restaurant in San Francisco.

Rocco's Cafe is named after Don's grandfather, Rocco Coscarelli, who ran Rocco's Fine Food restaurant for more than 20 years; the key ingredients were quality, quantity, and personality. This old-school Italian recipe for success was passed down to Don, who 17 years ago opened Rocco's Cafe in his honor.

Today, Rocco's enjoys a loyal following of regular customers who keep coming back to this South of Market neighborhood institution to experience the flavor of Italy with the feeling of Old North Beach. With Don as Chef everything is Special and each dish is an Original cooked with individual attention.
