Red quinoa & edamame salad

Red Quinoa and Edamame Salad with Hijiki and Ginger Vinaigrette

6 - 6oz. portions
2 cups Red Quinoa
2 cups Water
2 cups Shelled Edamame
¼ cup Small Diced Red Bell Pepper
¼ cup Small Diced Carrot
½ t. Olive Oil
2 T. Toasted Sesame Seeds
1 T. Dried Hijiki Seaweed
1 t. Peeled and Grated Fresh Ginger
2 T. Rice Vinegar
2 t. Agave Nectar
¼ t. Sambal Oelek
¼ t. Sea Salt

Combine Red Quinoa and water in a pot and bring to a boil. Reduce heat and simmer until tender and all water is absorbed. Let sit 5 minutes, fluff with a fork, and let cool. Meanwhile, soak hijiki in cold water for about 10 minutes or until soft, drain well and add to the cooled quinoa. Sauté the carrots and peppers in the olive oil and add to the quinoa. Add the edamame to the quinoa. Combine the remaining dressing ingredients in a small bowl and toss the quinoa mixture with this dressing.
