As a student trying to make ends meet, she took a position as a server in a banquet hall. Management soon realized that she could not hold a serving tray and she was gladly demoted to bartender. It was there that she became interested in the art of the classic cocktail. Following London, Zimei returned to the States to finish college. She moved to Washington, D.C. in 2003 for a Masters Program at American University in Washington D.C. and joined Ritz-Carlton Georgetown's opening team as the head bartender. Sierra joined Four Seasons Hotel San Francisco in April 2006. At Seasons Bar, she is known for her creative approach to cocktails with a twist, using seasonal and organic ingredients, including interesting herbs, unusual fruits, and crazy combinations.
