Coconut fried prawns with chipotle cream

Coconut Fried Prawns with Chipotle Cream
Serves 10

For the Cream
1/8 cup Chipotle in Adobo Sauce
1/8 cup Cilantro, minced
1/3 cup Mayo
2/3 cup Sour Cream
to taste Salt & Pepper

1. Place the Chipotle & cilantro in a mini food processor & puree. Add in the mayo & sour cream. Pulse until well incorporated. Season with salt & pepper.

For the Prawns
30 each Large Prawns, peeled & deviened, tail on
5 oz All Purpose Flour
3-4 each Eggs, beaten
1 cup Panko Bread Crumbs
1 cup Grated Coconut Flakes, unsweetened
Vegetable oil for frying

2. Mix together the panko & coconut. Season the prawns with salt & pepper. One at a time, dust with flour, dip into the eggs & then roll in the panko mixture.

3. Heat the vegetable oil in a wok to 375?. Deep fry the prawns 3 or 4 at a time until golden brown (about 1-2 minutes). Remove to a sheet tray lined with paper towels.

The Culinary Stage will be located in the Elephant Pharmacy parking lot on North Shattuck Ave. at Cedar St.
