Chicken, mango and roasted zucchini and pesto sandwiches

New twist on chicken sandwiches

Brown bagging it for lunch! Everyone's doing it and saving money, but there is no need to limit your family to same old boring PB&J or tuna! Private chef to the stars and consultant for Milton's Bread, Chef Jonathan Miller, shares some sandwich inspiration.

Chicken Mango

Milton's Multi Grain Bread
Mayonnaise
1/4-1/2 chipotle chile (from canned chipotle in adobo), to taste, seeded and chopped
Chicken Breast
Lettuce
4 slices fresh mango
Red onion, thinly sliced
Salt and Pepper

  • Mix the chipotle with enough mayo for two sandwiches; spread on both slices of bread.
  • Layer lettuce, mango, red onion, and chicken on one slice; season with salt and pepper.
  • Close sandwich with other slice.

    Veggie: Roasted Zucchini and Pesto

    Milton's Potato Bread or Gourmet White
    1 medium zucchini
    Olive oil
    Salt and pepper
    Mayo (recommended, but optional)
    Pesto (from a jar ok)
    Mozzarella or Provolone cheese
    1 roasted red bell pepper (from a jar)

  • Heat oven to 400 degrees.
  • Slice zucchini into thin rounds and spread on a baking sheet. Drizzle with a little olive oil and sprinkle salt and pepper over the zucchini.
  • Roast in upper part of oven until soft and fragrant, about 15-20 minutes. (Alternatively, the zucchini can be pan sauteed.)
  • While zucchini cool, spread optional mayo and two slices bread, pesto on one slice.
  • Layer with mozzarella (or provolone) and the roasted bell pepper. Add the zucchini when it is cool and close sandwich.

    PB & J

    Milton's Whole Wheat Bread
    Quality Peanut Butter (not unsalted)
    Strawberry Jam
    Fresh Strawberries, sliced or mashed

  • Spread peanut butter on both bread slices.
  • Spread jam on one slice. Top that slice with strawberries and close sandwich.

    About Jonathan Miller
    Private-chef-to-the stars Jonathan Miller is based in Los Angeles and currently is the private chef for an A-list movie actress (who we can't name). He previously worked as a private chef to JJ Abrams (Hollywood producer) and his wife Katie McGrath.

    In addition, Chef Jonathan worked as the chef/event planner for the University House - the Chancellor's residence at UC Santa Cruz (1998 - 2005). Prior to that, he co-owned "A Perfect Setting Catering" in Santa Cruz which, in addition to servicing weddings and private parties, offered a home delivery program to provide healthy weeknight meals for families.

    Chef Jonathan resides in Santa Monica with his wife and young daughter. The family is expecting another child within the next couple of months.
