Butter roasted mushrooms

A delicious buttery, mushroom dish in less than 5 minutes! Nick Smith caught up with Chef Eddie Blyden of Henry's in Berkeley for a yummy recipe that you can try at home.

Butter roasted turmeric-ginger mushrooms with an essence of ginger

6 ozs whole crimini mushrooms
6 ozs whole white button mushrooms
1 tbsp tumeric powder
1/2 0z fresh ginger peeled and thinly sliced
2 ozs unsalted butter
2 tbsp olive oil
2 tbsp soy sauce
1 sprig fresh rosemary
1sprig fresh thyme
¼ tsp black pepper
Pinch of salt
Crusty bread of your choice to dip in that delicious butter!

Toss mushrooms with turmeric, ginger and herbs .preheat oven to 500 degrees. In a preheated medium saute pan add olive oil, then butter. Allow butter time to brown then add mushrooms, salt and pepper. Toss gently then place in hot oven for 6 mins (convection) or 9 mins standard. Remove from oven, add soy sauce, gently toss again and serve in a warm bowl with that crusty bread!
