Pumpkin muffins with candied pecans

Pumpkin muffins with candied pecans and white icing recipe:

Ingredients:
1 (29 oz.) can of Pumpkin (100% pure)
2 c candied pecans (optional - see below for preparation)
1 ½ c brown sugar (packed)
1 ½ c vanilla soymilk
½ c melted butter (1 stick)
4 eggs
4 oz. vanilla yogurt
¼ c dark molasses
¼ c spiced rum
2 T baking powder
1 ½ T cinnamon
1 t baking soda
1 t nutmeg
½ t cloves
½ t ginger (ground)
½ t salt
4 c all purpose flour (unbleached)

Process:
Preheat oven to 375.
Generously butter large muffin tins.
Put the flour aside.
In a large bowl, combine all ingredients (except the flour) and mix well.
Add the flour to the mixed ingredients and mix well.
Using a ½-cup measuring cup as your measure guidance, spoon the batter into the greased muffin tins.
You should get 15-16 muffins from this batch.
Bake in a hot 375 oven for approximately 25 minutes.
Insert a toothpick or knife into the center of the largest muffin. If it comes out clean the muffins are done.
If not, return the muffins to the oven for another minute or so until an inserted toothpick or knife comes out clean.
Let cool for 20 minutes before adding frosting.
Frosting and Candied Pecans are optional.

Candied Pecans

Ingredients:
2 cups whole pecans
½ c brown sugar (packed)
¼ c honey
4 T butter
¼ t salt

Process:
Preheat oven to 375.
Leave butter aside.
In a 9" rectangular pan, combine all the ingredients (except butter) and mix well.
Break butter into pieces and drop randomly over the pecan mixture.
Set in hot 375 oven for 5 minutes.
Remove and mix well until the sweet mixture and butter covers all the pecans.
Return to oven for 5 minutes more.
Remove and mix well until the sweet mixture and butter covers all the pecans.
Set in the refrigerator for 10-15 minutes.
Remove and spoon the pecans and sweet mixture onto a cutting board.
Chop into pieces.
Add to the pumpkin batter and mix well.

White Icing:
2 c powdered sugar
Heavy Cream (add to desired consistency)
In a bowl, combine 2 cups of powdered sugar.
Slowly add heavy cream and mix well until the consistency of the frosting meets your desired thickness or thinness.
Drizzle over the Pumpkin Muffins for added sweetness and beauty.
