Sparkling wine cocktails

Nick Smith takes the trip to beautiful Domaine Chandon in Yountville to learn more about making the perfect wine-based holiday drink with flare.

Sparkling Poire
3 oz Chandon Brut Classic
1/4 cup diced Bartlett Pear
1/2 oz simple syrup

Directions: In a cocktail shaker, muddle pear with simple syrup. Shake with ice and strain into flute. Top with Chandon Brut Classic and stir. Garnish with pear slice.

Suggested Glassware: Champagne Flute

Chandon Pear Bellini
3 oz Chandon Brut Classic
1/4 cup diced Bartlett Pear (about half a pear)
1/2 oz simple syrup

Directions: In a cocktail shaker, muddle pear. Cover pear simple syrup. Shake with ice and strain into flute. Top with Chandon Brut Classic and stir. Garnish with crystallize ginger candy.

Suggested Glassware: Champagne Flute

Chandon Quite a Pear
3 oz Chandon Brut Classic
1/2 oz Stirrings All Natural Pear Bellini mixer
½ oz Ginger Beer

Directions: Pour ½ oz mixer into glass. Add Chandon Brut Classic. Float a splash of ginger beer.

Suggested Glassware: Tumbler

Chandon Nouveau Riche
3 oz Chandon Riche
Zest of lime

Directions: Fill glass with ice. Pour Riche over ice. Add Chandon Brut Classic. Zest a lime over the glass and garnish with a twist of lime.
