Spice-rubbed tri-tip with vegetables

Jonnatan Leiva's Spice-Rubbed Tri-Tip with Fall Vegetables
Serves 5

Ingredients
1 whole tri-tip (about 3 lbs.)
½ cauliflower head, cut into florets
1 whole cleaned and diced sugar pie pumpkin
½ cup sunchokes
2 bunches chopped sage
¼ cup unsalted butter
½ cup of extra virgin olive oil
Ground chiles to taste
Salt and pepper to taste

Directions
Heat oven to 350 degrees. Place two medium sauté pans on the stove and heat to medium high heat. Season the meat on all sides with the ground chiles, salt and pepper. Add oil to the pan and heat. Add meat to heated oil and brown on all sides. Next place the meat directly in the oven to cook through, approximately 15 minutes.

Meanwhile, prepare vegetables. Add the butter into the other sauté pan and stir by swirling the pan until the butter turns to an even golden brown color. Immediately add all of the vegetables at once and stir with the butter until coated with browned butter. Lower the heat, add sage and season with salt and pepper. Continue to stir and cook vegetables for an additional 5 minutes.

Pull the meat out of the oven and let it rest for 5 minutes before slicing against the grain. Divide the vegetables among five plates and fan meat on top. Enjoy this easy, hearty meal!
