Ground beef with asparagus sautéed in sweet sauce over lemon grass rice
Serves 2-4
Each serving: $3.75
Ingredients:
½ lbs of ground beef
12 oz of fresh asparagus
3 tablespoons of sweet sauce (found at your local grocery store or Asian grocery store)
1 frozen garlic cube
Salt and pepper to taste
¼ teaspoon of oil
1 pack of lemon grass rice pilaf (found at Trader Joes or your local specialty grocery store)
Method:
Wash the asparagus, place in a microwave safe dish, cover with saran wrap and microwave for about 2 minutes
Remove and cut asparagus into 1 inch pieces, set aside
Heat pan with ¼ teaspoon of oil
Add ground beef and 1 clove of garlic
Add salt and pepper to taste
Stir fry till the beef loses its redness
Add 3 tablespoons of sweet soy sauce
Add pre-cut asparagus and sauté
Continue to stir fry until the beef absorbs the soy sauce
Rice:
Heat the rice in the microwave (instruction on the package approx: 3-5 minutes)
Remove from microwave, plate and serve the beef on top of the lemon grass rice
