Recipe:
Red tomato, chicken and veggie soup
Serves 2 - 4
- 2 frozen grilled chicken breast (found at your local grocery store)
- 2 cans chicken Vienna sausage
- 1 celery stalk
- 1 cup diced carrots
- 1 can of peas
- 1 tomato
- 1 cup to 2 cup tomato ketchup (depending on how rich of a flavor you seek)
- 1 can (15 oz) of chicken broth (low sodium of regular)
- 2 cups of water
- salt and pepper to taste
- 1 frozen garlic cube
- 1 bag of croutons (any flavor)
Take frozen chicken breast and microwave for about 1 - 2 minutes (depending on the heat of your microwave) or until the check can be cut and diced with ease
Heat pot and add 1 can of chicken broth, 2 cups of water and 1 frozen garlic cube
Add 1 cup of diced carrots
Add salt and pepper to taste
Remove the chicken from the microwave and dice into small cubes
Add Chicken to the soup base
Add tomato ketchup and stir
Add the dice Vienna sausage into the soup base
Bring to a semi boil and add the canned peas
Add cubed tomato
Bring to a boil, let sit for about 8 minutes before serving
Serve soup with croutons
