Recipe: Veal Osso Bucco

A classic Italian dish from owner and chef, Giovanni Raccanello, of Ristorante La Toscana.

Veal Osso Buco

Ingredients:

  • 4 Veal Shanks
  • 6 Cloves Garlic, Chopped
  • 2 Medium Yellow Onions, Diced
  • 10 to 12 Mushrooms, Sliced in Half
  • 6 Celery Stalks, Diced
  • 1 c. Red Wine- Burgundy or Cabernet
  • 1 Small Can Tomato Paste
  • 2 Tbsp. of Fresh Thyme, Chopped
  • 2 Tbsp. Fresh Sage, Chopped
  • 2 to 3 c. Chicken Stock
  • Cooking Oil
  • Flour, for Lightly Dusting Veal Shanks
  • Salt & Pepper to Taste

Heat oven to 400.

1. Season Veal Shank with Salt and Pepper on both sides. Lightly flour each side of the Veal Shank.

2. In a sauté pan, over medium heat, heat oil, add veal shank and brown on each side. When brown, remove shanks, and place in a rimmed baking sheet about 2 to 3 inches high.

3. In sauté pan, add a few tablespoons of cooking oil, sauté garlic until golden brown, add onions and sauté until transluscent and softened.

4. Add celery, carrots and mushrooms. Season with salt and pepper and let vegetables soften.

5. Add tomato sauce and red wine. When red wine comes to a boil add 2 to 3 cups of chicken stock. Bring to a boil.

6. Pour sauce over the veal shanks in baking dish, covering the veal shanks.

7. Bake for 1 1/2 hours. Serve with Polenta or Rice.

About Chef Raccanello:
Born in 1948 in the town of Crespano di Grappa, in the Veneto Region of Italy, Giovanni came to the United States in 1958. He began his career in the kitchen at Charlie's Park In (now Mel's Drive In) and worked in several well known San Francisco restaurants to learn the skills he has today. Giovanni learned most of his skills under Oreste Orsi, owner of Orsi's restaurant in the San Francisco financial district ( now closed ). In 1986, he became Chef/Owner at La Toscana and his been there ever since. His specialties are Osso Buco, Lamb Shank, Cannelloni, Lasagne and Bolognese Sauce, just to name a few.
