Recipe: All Natural Hawaiian Beef "Poke" with Kahuku Sea Asparagus
(Preparation for 6)

Poke Sauce Ingredients

  • 6 fl oz Soy sauce
  • 1 tbsp. Hot Chili Sesame Oil
  • 1 tbsp. Oyster Sauce
  • 1 tsp. Sambal Oleck (Chili Paste)
  • 1 tsp. Ginger- chopped fine

Method:

Combine all ingredients and reserve.

Poke Mix Ingredients

  • 12 oz wt. - 2 ea Rib Eye Steak
  • 4 oz wt.Maui Onions- Julienne
  • 6 oz wt.Grape Tomatoes
  • 6 oz wt.Watercress
  • 6 oz. wt. Sea Asparagus
  • 2 oz. wt. Chives- chopped fine
  • 1 tsp. Toasted Sesame Seeds
  • 2 tsp. Garlic- chopped fine
  • 1 tsp. Sesame Oil

Method

1. Season steak and cook until desired temperature, Chef recommends Medium Rare. Once meat has rested for 3 minutes dice into cubes, reserve.

2. In a hot skillet add the sesame oil, then flash sear the sea asparagus and watercress, finish with 1 fl oz of poke sauce.

3. Place the watercress/sea asparagus mixture in a mixing bowl and toss with remaining Poke Mix ingredients.

4. Add in the beef and 2 fl. oz of Poke sauce, Enjoy!
