Triple Chocolate Brownies
Ingredients:
- 10 ounces of sweet dark chocolate
- 3 ounces of semi sweet chocolate
- 10 ounces of unsalted butter
- 6 ounces of flour
- 3 ounces of white chocolate
- 1 tablespoon of baking powder
- 4 eggs beaten
- 1 teaspoon of vanilla
- 12 ounces of castor sugar
- Melt the 10 ounces of dark chocolate and butter together in heat proof bowl over boiling water.
- Sieve flour and baking powder together and set aside.
- Add sugar to melted chocolate and then the eggs and vanilla.
- Fold in flour and both chocolates.
- Pour mixture onto 1" cookie sheet and bake for 25 minutes at 325 degrees.
Ingredients:
- 1 cup of sugar
- 1 tablespoon of water
- Mix in a heavy bottom sauce pan until sugar is almost a sandy brown color.
- Then cool for 2 minutes and drizzle onto to nonstick cookie sheet to form tuiles.
Ingredients:
- 6 ounces of semi-sweet chocolate
- ½ ounce of espresso or strong coffee
- Melt together over boiling water in heat proof bowl, set aside.
- White Chocolate Gelato
- 1 Tablespoon of extra virgin olive oil.
- Mint leafs
- 1 teaspoon of rock salt
- Whipped cream
- Cut a 2" round out of the brownie and place in large bowl.
- Add a scoop of white chocolate gelato over brownie.
- Pour melted espresso chocolate sauce around brownie.
- Pipe whipped cream over gelato and add mint leaf and sugar tuile
- Sprinkle rock salt and extra virgin olive oil around dessert and serve.

David Haydon's Bio:
A native of the Bay Area, David Haydon got his start in the restaurant business at the age of fifteen. He was classically trained in French but specializes in Italian cuisine. David opened his first Restaurant at 23 years old, Café Ristorante Italia in San Rafael, and seven years later Il Davide was born. Il Davide has been the most award-winning restaurant in Marin for its eclectic selection of classic and Tuscan cuisine and its extensive wine list and wine by the glass selection. A cookbook is in the works.
