Crispy Thai Snapper Serves 2
Ingredients:
- 2 Snapper Filets
- 1 Bunch baby bok choy
- 1 Tbsp. Chopped ginger
- ½ Garlic Clove
- 1 Tbsp. Shallots
- 1 oz. Cilantro
- 1oz. Mint
- 1oz. Shaved jalapenos
- 1 Tbsp. Lychee
- Orange Zest Peel
- 1 tsp. Sugar
- 1 Tbsp. Lobster Stock (can leave out if you don't have)
- Warm up oil in pan. Put a little salt on the skin side of the fish and then place it in the pan when oil's nice and hot. Cook on both sides for two minutes.
- Steam the bok choy for 10 minutes.
- To make the sauce, combine the orange zest, some sugar, and a little bit of lobster stalk. Pour over the plated bok choy. When the fish is finished, plate and garnish with the herbs.
