Homemade vegetable soup

You can help build your child's confidence and help them eat a healthier diet by cooking with them in the kitchen. We visited some little chefs at Friends of Potrero Hill Nursery School in San Francisco who shared a recipe for vegetable soup.

Recipe: Friends of Potrero Hill Soup!

  • 2 cups barley
  • 3 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 quarts vegetable broth (homemade, store bought, or bouillon) - we recommend organic vegetables - at school, each child brings one, so we have Zachary's zucchini, Paul's potato, etc

The night before:
Soak the barley in enough water to cover it

Day of:
Saute onion in olive oil in large soup pot
Drain barley and add to onion
Add vegetable broth to pot
Bring to a boil, then simmer
Add vegetables - you can do this in order of hardest to softest, but we find it's delicious no matter the order

Simmer 1.5 hrs, season with salt and pepper, and serve! Delicious with bread and butter.
