Seared Butternut Squash and Potato Gnocchi
Ingredients:
- 4 each russet potatoes
- 1 each butternut squash, cut in half, seeds removed
- 2 cups flour
- 2 eggs, beaten
- 1 cup Parmesan
- 2 Tbl Kosher salt
- 1 Tbl brown sugar
- Roast potatoes and squash in 400* oven until soft, about 11/2 hours.
- Scoop out flesh and put through a ricer.
- Add everything else and mix until incorporated.
- Place dough in a pastry bag and pipe and cut into small logs and then place into simmering water.
- Remove gnocchi once they float and shock in ice water.
- Drain, toss in olive oil and sear in pan. You are done and ready to plate.

Sean's carefully crafted menu uses fresh seasonal ingredients to create dishes that are simultaneously sophisticated and familiar, like braised short ribs over a horseradish-spiked potato puree and risotto with chanterelles and butternut squash in a Parmesan broth.
"My background in fine dining guides everything I do," he says, "but I also build a certain comfort level into my menus, so that people can relax and enjoy themselves."
