Hearty Vegetable SooFoo Soup

Recipe: Vegetable SooFoo Soup

A delicious soup of vegetables and grains that is perfect for the coming cooler weather.

Serves 4

Ingredients:

  • 6 cups vegetable broth (homemade or store bought)
  • 2 cups SooFoo
  • 1 cup diced tomatoes
  • 1 cup diced onions
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 cup diced green beans
  • Salt and pepper
Instructions:
  1. In a large soup pot, combine all ingredients.

  2. Bring to a simmer over moderate heat.

  3. Cover and reduce to slow simmer for 45-50 minutes until SooFoo is tender.

  4. Salt and pepper to taste.

  5. Add additional broth as needed.

Maurice's newest invention is Zip Notes, a battery powered dispenser that delivers any length sticky note paper on a roll. In 2001, Kanbar published an advice book for would be inventors entitled, Secrets from an Inventor's Notebook.

A renowned supporter of the arts, especially independent film, Maurice created New York's first multiplex cinema and he endowed the Kanbar Institute of Film at New York University.

In 2006, Maurice produced an animated feature film, "Hoodwinked," which held the number one spot in the United States during its first week of release and the movie has grossed more than US$100 million in domestic and foreign box office receipts. His film company, Kanbar Entertainment is producing "Hoodwinked Too," the sequel to the original hit film and is involved with developing other film projects.

His most recent creations are Blue Angel Vodka and SooFoo (a blend of brown rice, lentils and grains). Maurice is a graduate of Philadelphia University and is a member of Mensa.
