Walnut Brittle
Recipe by Ravi Kapur, Executive Chef, Prospect

Yields about 2 cups

Ingredients:

  • 2 C walnuts, blanched and dried
  • ¼ C plus 2 TBS light corn syrup
  • 1/8 C sugar
  • 1/8 tsp aleppo chile powder
  • Sea salt to taste
Method:
Preheat oven to 325 F. Rough chop the walnuts then put into a sieve and shake to discard any dust. In a mixing bowl, combine all ingredients. Spread on a rimmed non-stick baking sheet. Using a rolling pin wrapped in plastic wrap or just your hand, pat the mixture down on the baking sheet to achieve a thin layer (about 1/8 " thickness). Bake for 30-45 minutes.
