Colibri was opened more than a decade ago by Owners Eduardo and Sylvia Rallo and has been delighting taste buds ever since. Specializing in Aztec and Mayan foods, Colibri offers a gourmet blend of rich flavors, textures, and traditions with a unique blend of Spanish and French influences. The style is definitely authentic Central Mexican and the ingredients are local and fresh.

Colibri boasts a mouthwatering menu including dishes such as Chicken Mole, Chile Relleno, and Filet Mignon.

Guests won't want to miss out on their always freshly home-made tortillas and made at your table guacamole.

The bar program is just as meticulously created as each item on the food menu. Colibri specializes in a variety of Mexico's national spirits. They offer a variety of Mexican beers, both bottled and on draft.

In addition, even the biggest tequila or mezcal aficionado couldn't be disappointed at their selection. And for budding tequila or mescal connoisseurs or guests just looking to grab a delicious drink, Colibri provides a detailed menu with descriptions for many of the products, a specialty cocktail menu, and incredibly helpful, passionate staff to assist with any questions you may have.

Guacamole Recipe

1.5 Avocados

1.5 Spoons of chopped onions

1 Spoon of chopped tomatoes

1 Spoon of chopped cilantro

1 Spoon of chopped jalapeño

Mezcal Margarita

1.5 oz. Mezcal

1 oz. fresh lime juice

1 oz. organic agave nectar

In a mixing glass combine Mezcal, lime, agave nectar and ice. Shake to blend ingredients and then transfer into a Margarita glass (salted rim is optional)

Tijuana Nights

1.5 oz. Mezcal

Half oz. passion fruit concentrate

Half oz. pomegranate concentrate

2 oz. Ginger Beer

In a mixing glass combine Mezcal, passion fruit, pomegranate and ice. Shake ingredients and then transfer into a Margarita glass, top with Ginger Beer.
