Homemade Cracker Jacks


  • 3 qts popped popcorn
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 3/4 cup light corn syrup
  • 1/2 tsp baking soda
  • 1/4 tsp vanilla extract
  • 2 cups toasted,salted peanuts

Preheat oven to 250 degrees. Mix butter, brown sugar and corn syrup in a saucepan over medium heat, stirring until they melt then simmer lightly five minutes WITHOUT stirring. Remove from heat and add the baking soda (watch for bubbling over!), vanilla and peanuts, coating them well. Then toss with the popcorn in a large mixing bowl, carefully, so as not to break the kernels. Spread it in a uniform layer on a baking sheet and cook in the preheated oven for forty five minutes, stirring and turning over every fifteen minutes. Cool on the sheet, break apart into larger pieces.
