Sautéed Wild King Salmon with Braised Red Cabbage and Mustard Glaze
Serves 8
Braised Red Cabbage
2 Tbsp. Walnut Oil
1 ea. Onion-Small Dice(preferable a Walla-Walll, Maui Sweet or Vidalia)
1 Tbsp. Caraway Seeds
1 ea. Head of Red Cabbage-finely shredded ~3 pounds
Water as needed
Salt and Pepper
4 ea Strips of bacon cut into julienne and cooked crisp.
Sweat the onions and caraway in the walnut oil until the onions are soft
Add the cabbage and season, add a small amount of water to avoid scorching. Cover and stir frequently. Cook till the cabbage is just tender, water should be completely evaporated. Do not over cook, the color looks wash out when over cooked.
Adjust seasoning. Can be made up to a day in advance and re-heated in the microwave.
Stir in the crisp bacon just before serving.
Mustard Glaze
2 Oz Mustard Powder
2 Oz Sugar
2 Oz Water
Sautéed Salmon
8 Ea Salmon Fillets-7 Oz. Each
Peanut Oil
Freshly Ground Black Pepper and Kosher Salt
1 Bnch. Chives-Minced fine
Allow the salmon to sit at room temp for 15 minutes prior to searing. Season and brush with the oil. When pan is hot, place fish presentation side down to sear. Turn over and brush with the mustard glaze and finish to your desired temperature. Serve over the warm cabbage, top with fresh chives.
