Banana cupcakes with chocolate frosting

Banana Cupcakes
**No dairy
Yield: 2 dozen


  • 2 c. all-purpose flour
  • ¼ c. cake flour
  • ¾ t. salt
  • 2 ¼ t. baking soda
  • ¼ t. nutmeg
  • 1 c. sugar
  • 1 c. brown sugar
  • 1 c. + 2 T. oil
  • 3 eggs
  • 1 yolk
  • 1 ½ t. vanilla
  • 1 T. rum
  • 2 c. banana puree
  1. Sift together dry ingredients into a large bowl. Whisk together wet ingredients, then mix into dry ingredients until just incorporated.

  2. Scoop into lined muffin pan. Bake at 350 degrees for about 20 mins. or until they test done.
Mi2Sweets' Bittersweet Chocolate Frosting


  • 8 oz. powdered sugar
  • 1/3 c. cocoa powder
  • ¼ t. salt
  • 8 oz. butter, room temperature
  • ½ t. vanilla extract
  • 6 oz. bittersweet chocolate
  • 3 oz. unsweetened chocolate
  • 1 ¼ c. sour cream
  1. Combine chocolates and melt; set aside. With a paddle attachment, beat butter and vanilla together until light and smooth. Sift together powdered sugar, cocoa and salt then add to the butter mixture and beat until smooth. Carefully beat in melted chocolate.

  2. Scrape down the sides of the bowl, and mix in sour cream.
