TRUFFLE BURGER Serves: 4
To taste Onion Marmalade
4 each Hamburger buns
2 lbs Freshly ground chuck, high quality
To taste Salt and pepper
To taste Truffle Vinaigrette
1 bunch Frisee
1 each Truffled Brie Cheese
Salt and Pepper hamburger meat and shape into four patties. Grill to desired doneness. Toast buns. Place Onion Marmalade on the bottom half of each bun. Place cooked burger patties on top of onion marmalade. Quarter Truffled Brie Cheese and place one slice on the top of each burger patty. Discard any green parts of frisee (they're bitter) and quarter bunch. Dress with Truffle Mayonnaise. Place frisee on top of cheese and top with bun.
TRUFFLED BRIE CHEESE
6 ounce slice Brie Cheese
1 each Small Black truffle, sliced thinly (preferably Perigord)
Cut Brie Cheese in thirds lengthwise. Add sliced truffles between each layer. Reassemble cheese.
¼ Cup Sugar
½ Cup Sherry Vinegar
4 quarts Onions, sliced
Add enough water to the sugar to make the texture like wet sand. Heat the sugar/water mixture in a heavy pot on medium heat until golden. Add vinegar to deglaze. Slowly reduce until it becomes a syrupy texture (gastrique).
In a medium pot, heat four tablespoons of butter on low to medium heat. Add onions and cook 45 minutes, stirring occasionally (scraping bottom of pan) until golden brown. Add gastrique to the caramelized onion.
1 each Egg Yolk
1 Tablespoon Sherry Vinegar
4 ounces Canola Oil
2 grams Black Truffle bits
Whip egg yolk in a bowl and add Sherry Vinegar. Slowly drip in the Canola Oil. Finally, add Black Truffle bits.
