Dell'Osso's Sautéed Sweet Corn
4 ears of fresh sweet corn
1 large green bell pepper
1 large red bell pepper
1 yellow onion
2 tablespoons olive oil
½ teaspoon salt
½ teaspoon pepper
Bring water to boil and add corn. Remove corn after 90 seconds. Let Cool. Cut corn from cob. Dice bell peppers and onions.
Heat large skillet over medium heat. Cover bottom of skillet with 2 tablespoons olive oil.
Combine corn, bell peppers and onion in the skillet and sauté until tender. Add salt and pepper to taste.
Serving Suggestions: Serve warm as a side dish, or add black beans and serve as a salsa with chips.
Pumpkin Cookies with Cream Cheese Frosting

Cookies:
1 cup shortening
1 cup sugar
1 cup pumpkin
1 egg
2 cups flour
1 teaspoon soda
1 teaspoon cinnamon
½ teaspoon salt
Frosting:
1 tablespoon vanilla
1 pound powdered sugar
1 stick butter
8 oz. cream cheese
Cream shortening, sugar and pumpkin. Add egg and mix well.
Add sifted dry ingredients. Drop from spoon onto cookie sheet. Bake at 375 degrees for 10-12 minutes. Beat frosting ingredients until smooth. Frost cookies after they have cooled. Decorate with favorite toppings.
