Mouthwatering homemade tamales

Homemade tamales are easier to make than you think. Chef and partner of Mamacita Restaurant in San Francisco, San Josi, shares his authentic and delicious tamale recipe that you can make at home.

Tamale Recipe
Makes 5 lbs.

Tamale Mole

5 Pieces Chipotle Chile
10 Pieces Ancho Chile
1 tsp. Cumin
1 tsp. Sugar
1/4 White Onion
2 Garlic Cloves
3-4 Cups Caldo de Pollo

Red Tamala Masa

5 lbs. Tamale Masa
1.5 lbs. Lard
1 tsp. Baking Powder
2 Cups Chicken Stock
3 Tbls. Salt

Beat until floats. Cool. Re-whip in an hour.
