Savory stir fry chicken

Stir Fry Chicken Recipe:

Bring 4 quarts of water and 3 tablespoons BR Cohn Olive Oil to a rapid boil.

Prepare Chicken Marinade:

  • 1/2 cup Br Cohn Basil Garlic Olive Oil
  • 2 Tablespoons BR Cohn Herb Rub
  • 1/2 of minced garlic

Add:

  • 2 large boneless & skinless Rocky Range chicken breasts
  • Trimmed & sliced into approximately 1 ½" x ½" slices

Place ingredients into a bowl, stir and let marinade while you get the remaining ingredients ready.

When the water has come to a boil add 8 oz. Gluten Free spaghetti pasta. Return to the boil, stirring frequently.

Cook uncovered for 6-9 minutes.

Drain and place into a bowl and toss with BR Cohn Extra Virgin Olive Oil & cover.

While pasta is cooking, cut up vegetables.

Prepare 3/4 cup of each vegetable:

  • Snap peas
  • Broccolini, cut into 1" pieces
  • Celery, sliced into 1/2" pieces
  • Shitake Mushrooms slice into 1/4"
  • Red and yellow bell pepper large dice
  • 1 small red onion large dice
  • 1 cup BR Cohn Chardonnay
  • 6 large cloves garlic minced or pressed
  • 1 tablespoon Fresh Basil minced
  • 1 tablespoon Fresh Thyme minced
  • 1 tablespoon Fresh Oregano
  • Kosher salt & Fresh ground pepper to taste

Heat wok; add 1/4 cup BR Cohn Basil Garlic Olive Oil, ½ cup BR Cohn Chardonnay, vegetables and remaining garlic. Cook, stirring about 5 minutes. Add the fresh herbs blending well. Remove vegetables to plate and cover.

Return wok to heat, add 1/4 cup Br Cohn Basil Garlic Olive Oil, 1/2 cup BR Cohn Chardonnay, and marinated chicken. Stir quickly and cook till chicken is done, about 5 minutes, season to taste with the salt and pepper.

Plate the pasta, top with vegetables and then chicken mixture.

About Bruce Cohn:
Bruce brings 35 years of wine country wisdom to his role as proprietor of his Olive Hill Estate vineyards, which he established in 1974 and proprietor of B.R. Cohn Winery, founded in 1984 in the heart of Sonoma Valley. Growing up on his family's Sonoma County dairy farm, Cohn acquired a keen appreciation for agriculture and hard work, setting the stage for what is regarded today as one of California's most successful family owned and operated wineries. A strong work ethic and passion for food and wine provided Cohn with the fundamental tools that now place him at the forefront of the wine industry.

As proprietor of B.R. Cohn Winery, Cohn is actively involved in the winery, overseeing daily operations and every aspect of the property from winery production to the tasting room to the annual Charity Fall Music Festival.
