Chicken with lemons and olives

Experience the sights, sounds, and especially the flavors of Morocco with El Mansour restaurant.

Recipe: Chicken with lemons and olives

  • 1 cornish Hen or Chicken
  • 1 bunch parsley
  • Coriander
  • Cumin
  • Ginger
  • black pepper
  • 1 bunch Cilantro
  • preserved lemons
  • salt
  • oil
  • saffron
  • garlic and onions

Clean the Cornish hen or chicken. Chop parsley, cilantro, garlic and onions. Add the spices and mix the whole combination in a pot, and let it marinate for a couple of hours. Brown it in a frying pan and then cook it in the oven for about 30 minutes. Served with preserved lemons and Kalamata olives.
