Sweet beignet treats

Puff Puffs
From Chef Kofo Domingo, Lagosia Restaurant in Berkeley

1 1/8 cup of granulated sugar
3 cups of all-purpose flour
2 Tbsp. active dry yeast
1 1/2 cup of lukewarm milk
3/4 cup of lukewarm water
Canola oil for deep frying

Method:

  • Add dry yeast, milk, water, 1 tblsp of granulated sugar, 1 tblsp flour in a mixing bowl. stir till dry yeast dissolves and yeast activates and bubbles.
  • Add the rest of the flour, half the remaining granulated sugar, and mix till it becomes a thick batter.
  • Cover and allow to rise till double it size (approx 1 hour)
  • Heat up frying oil till approximately 330 degree.
  • Scoop balls of risen dough into hot frying oil
  • Fry till golden brown on both sides.
  • Drain and toss in rest of granulated sugar.
