Kid-friendly restaurant menus

We've heard that if you teach kids at an early age to enjoy great food, you'll "hook them" for life. Our own Nick Smith checked out some kid friendly ideas with Chef Michael Dunn of Yankee Pier in Lafayette.

Macaroni and Cheese
Chef/Partner Michael Dunn
Yankee Pier Lafayette

Ingredients:
2 ounces butter
2 ounces flour
2 cups Milk
8 ounces Cheddar cheese
1 pound Pasta shells (cooked)
2 ounces Fresh Grated Parmesan
salt and pepper to taste

Method:

  • Melt butter in a saucepan at medium low heat
  • Add flour to butter and mix, creating a roux
  • Add milk, a little at a time, to the flour mixture until creamy
  • Add the Cheddar cheese
  • Add in the cooked pasta and combine
  • Salt and pepper to taste
  • Pour mixture into individual baking dishes, cover with Fresh Parmesan and bake under broiler until lightly browned.
