Fish sticks you can make at home

Chef Gerald's Family Friendly Fish Sticks
Serves 2-4 (depending on size of child)

Ingredients:
1/3 cup flour
2 eggs, beaten
1/2 cup Kataifi or Panko breadcrumbs
8 ounces white fish filet (such as halibut or cod)
Kosher salt
Freshly ground black pepper
1/3 cup olive oil
Bamboo or other wooden skewers (optional)

Method:
Place the flour, eggs and Panko in separate, shallow bowls and set aside. Cut the fish into 4 long strips (approx. 2 ounces each) and lightly sprinkle all sides with salt and pepper. Dredge each piece of fish first in the flour, next in the eggs and then last in the Kataifi and set aside. Warm the olive oil in a nonstick sauté pan over medium heat. Place the fish in the pan and fry for 2-3 minutes on one side. Lower the heat to medium low and continue to fry the fish sticks on their flip sides for 2-3 minutes, or until the fish is cooked through. Remove the fish sticks and set aside on a paper towel lined plate. Spear each end of the fish with bamboo skewers. Ready to serve.
