"Avenue Q" star's unique mac 'n cheese recipe

Spicy Smokey Macaroni and Cheese with Turkey Bacon
Serves 6

Cook Time: 35 Minutes

Ingredients:

  • 1 (16 ounce) package uncooked shell pasta
  • 10 slices turkey bacon
  • 1 (1 pound) loaf processed cheese food (such as Velveeta®), cubed)
  • 3/4 cup heavy cream
  • 1/2 cup fat free half-and-half
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
      Directions:
      1. Bring a large pot with lightly salted water to a rolling boil. Stir in the shell pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 13 minutes. Drain well in a colander set in the sink.

      2. While the pasta is cooking, place the turkey bacon strips between two paper towels on a microwave-safe plate. Cook in the microwave on High until the bacon is crispy, 4 to 6 minutes depending on the microwave. Allow the bacon to cool; crumble and set aside.

      3. Once the pasta has cooked and is draining, combine the processed cheese, cream, and half-and-half in the pot that was used to cook the pasta. Cook and stir over medium heat until the cheese has melted and the sauce is bubbly. Remove from the heat; stir in the paprika, cayenne pepper, and crumbled turkey bacon. Stir the cooked pasta into the sauce until evenly coated.

      Easy "Peas"y Macaroni and Cheese

      Ingredients

      • 2 Boxes of your favorite boxed brand of yellow cheddar macaroni and cheese
      • 1 pound of diced ham
      • 4 ounces of frozen peas
      Directions:
      1. Cook pasta according to box recipe.

      2. While the pasta is boiling, dice the ham and put it in the bottom of the colander

      3. Drain the pasta in the colander with the ham, which will automatically heat it up!

      4. Throw in the frozen peas on top of the pasta, still in the colander. The peas will defrost and warm up from the steaming noodles.

      5. Make the sauce as the directions indicate, then stir in ham, peas, and pasta.

      6. Serve hot.

      Extra Cheesy Macaroni and Cheese

      Ingredients:

      • 2 Boxes Yellow Cheddar Macaroni and Cheese
      • 1/4 Cup Freshly grated parmesan
      • 1/4 cup Freshly grated gruyere
      • Nutmeg
      Directions:
      1. Add ¼ cup of freshly grated parmesan, ¼ cup of freshly grated gruyere and a sprinkle of nutmeg to 2 boxes of your favorite brand of boxed white cheddar mac and cheese for a delicious and savory side-dish or a hearty main course.
