Boudin recipe for Salmon Sourdough Club

Boudin SF is known for casual eating and great bread, but now they've added something new to the mix. Nick Smith visited Boudin SF in Corte Madera and got some great /*recipes*/.

RECIPES:

Salmon Sourdough Club
4 oz. grilled salmon
1/4 of whole fresh avocado, sliced
2 thick strips of crisp bacon
3 slices vine ripened marinated tomatoes
1 leaf of Romaine lettuce
3 Tbsp of pesto mayonnaise

Spread the pesto mayo onto the sliced sourdough bread Place all other ingredients between the two slices of fresh baked Boudin sourdough French bread, cut in half and enjoy.

Grilled Salmon Spinach Salad
4 oz. grilled salmon
2 cups of baby spinach leaves
1/4 of a Red bell pepper, cut into strips
4 Cherry tomatoes, sliced in half
1/2 egg, hard boiled and diced
3 slices of yellow onions, marinated in 1 Tbsp. balsamic vinegar
5 crimini mushrooms, sliced

Grill the salmon and set aside. Toss baby spinach leaves with red peppers, cherry tomatoes, hard boiled egg, balsamic marinated onions and mushrooms together in medium mixing bowl. Add in several Tbsp of tangy, honey mustard vinaigrette and toss. Place salad on a plate and top with grilled salmon. Serve and enjoy.
