Pacific Puffs' Signature Fruit Whip
Serves: 10-12
Puffs:
- ½ C. butter or margarine
- 1 C boiling water
- 1 C sifted all purpose flour
- ¼ tsp. salt
- 4 eggs
- Melt butter in 1 cup boiling water. Add flour and salt all at once, stir vigorously. Cook and stir until mixture forms a ball that won't separate. Remove from heat, cool slightly. Add eggs one at a time, beating after each until smooth.
- Drop by heaping tablespoons onto a greased cookie sheet (3 inches apart). Bake at 400° until golden brown & puffy (about 30 minutes). Remove from pan, split and cool on rack.
- Fill puffs with fresh whipped cream and seasonal fresh fruit such as strawberries or raspberries. Dust finished puffs with powdered sugar and serve immediately or keep refrigerated.
Brothers Trent and Rhys Carvolth were born and raised in the Bay Area. Growing up in Santa Rosa, the Carvolths developed a taste for desserts at an early age, which they attribute directly to their mother, Noreen.
Their mother had perfected her recipe for cream puffs before they were born. Growing up, they were the favorite dessert and always the one that was requested for birthdays and special occasions.
Both Trent and Rhys went to school on the East Coast. Trent is a 2004 graduate of Cornell University, where he lettered in football and received a degree in Industrial Labor Relations. Rhys attended Colgate University and graduated in 2007.
Spending much of his time abroad, Rhys earned a degree in International Relations. Returning home to San Francisco, the brothers decided to open Pacific Puffs in 2009.
Over time their mother's cream puffs had achieved a legendary status amongst family and friends. For years, everyone said she needed to open a shop and bring the puffs to the public. Pacific Puffs pays homage to this family dream.
Starting the business fulfilled a number of their goals. They have become a part of a wonderful community on Union Street, get to work together everyday, and most importantly are excited and proud to offer their family's favorite dessert.
