Seafood dish: Lobster Martini

Lobster and Avocado Martini "Shaken not Stirred" with Creamy Mango-Lime Vinaigrette
For 4-6 people

Martini

  • 1C Diced Fresh Lobster Meat
  • ¼ C Diced Fresh Tomatoes
  • ¼ C Diced Cucumber
  • 1/3 C Diced Mango
  • 1/3 C Diced Avocado
  • 2 T Chopped Cilantro
  • 1 ea. Minced Serrano Chilies (no seeds)
  • 3 T Creamy Mango Dressing
  • Salt and Pepper to taste

"Shake" or toss all items together in a large mixing bowl. Taste and adjust seasoning if necessary and serve cold in chilled martini glasses with an olive skewer.

Creamy Mango Vinaigrette

  • ½ C Mango Juice or 1 fresh peeled Mango
  • 1 T Lime Juice
  • 1 t Honey
  • ½ C Oil (Grape Seed or Olive)
  • 1 t Chopped Cilantro
  • 1 ea. Minced Serrano/Jalapeno Chili no seed

Mix all ingredients together in a blender. While blending slowly drizzle in the oil. Remove from the blender and add the cilantro and chilies. This can be made a day in advance. This vinaigrette is great on chicken, or fish especially when served with mixed greens.
