Lobster and Avocado Martini "Shaken not Stirred" with Creamy Mango-Lime Vinaigrette
For 4-6 people
Martini
- 1C Diced Fresh Lobster Meat
- ¼ C Diced Fresh Tomatoes
- ¼ C Diced Cucumber
- 1/3 C Diced Mango
- 1/3 C Diced Avocado
- 2 T Chopped Cilantro
- 1 ea. Minced Serrano Chilies (no seeds)
- 3 T Creamy Mango Dressing
- Salt and Pepper to taste
"Shake" or toss all items together in a large mixing bowl. Taste and adjust seasoning if necessary and serve cold in chilled martini glasses with an olive skewer.
Creamy Mango Vinaigrette
- ½ C Mango Juice or 1 fresh peeled Mango
- 1 T Lime Juice
- 1 t Honey
- ½ C Oil (Grape Seed or Olive)
- 1 t Chopped Cilantro
- 1 ea. Minced Serrano/Jalapeno Chili no seed
Mix all ingredients together in a blender. While blending slowly drizzle in the oil. Remove from the blender and add the cilantro and chilies. This can be made a day in advance. This vinaigrette is great on chicken, or fish especially when served with mixed greens.
