Recipe: Breakfast bruschetta

Breakfast Brushetta:
Serves 2

Ingredients:

  • 2 slices thick wholegrain bread
  • 1 Tbsp LM Extra Virgin Olive Oil
  • 1 Ripe Avocado - peeled, de-seeded and crushed with a fork
  • 2 tsp LM Dukkah
  • Small handful baby spinach leaves
  • 1 tomato, sliced
  • 2 fresh basil leaves
  • Sea Salt & black pepper, to taste
Method:
  • Toast the bread and spread with the crushed Avocado
  • Top with baby spinach leaves and tomato and sliced basil leaves
  • Grind over a little black pepper
  • Drizzle over the extra Virgin Olive oil and serve
Fresh Shucked Oysters with Smoked Salmon:
Serves 4

Ingredients:

  • 16 Pacific rock oysters
  • 6 oz smoked salmon, chopped finely
  • 1 lime leaf, finely chopped (don't chop the stalk in the middle)
  • 8 coriander leaves
  • 8 chives chopped finely
  • green Tabasco, to taste
  • 1 lime juiced
  • 1 Tbsp LM Dukkah
  • 1 Tbsp LM Extra Virgin Olive Oil
Method:
  • In a small bowl add all the ingredients and fold very softly.
  • When this has all been incorporated place a small spoon full on top of you oyster and serve.
