Make Your own Cajun Seasoning
1/2 cup salt * optional or salt substitute
1/4 cup garlic powder
1/4 cup fresh ground black pepper
2 tablespoons cayenne pepper * this adds the heat
2 tablespoons thyme
2 tablespoons ground oregano
3 tablespoons onion powder
Combine all ingredients mix thoroughly and store in air tight jar. Use it like you would salt and pepper
Cajun Corn Maque Choux (Mockshoo) This is a dish that can be used as a side dish or a main course. Side dish without meats can be used to compliment Chicken, Turkey or Ham. As a main dish, serve over rice.
Cajun Corn Maque Choux
1 small onion chopped
1/4 cup chopped green pepper
1-2 Tablespoons olive oil or bacon drippings
3 cups fresh or frozen sweet corn
1 cup diced tomatoes
1/4 pound andouille sausage cooked and diced
1/4 pound cooked chicken cut into small pieces ( breast or thighs)
Cajun Seasoning to taste about 1/4-1/2 teaspoon
Cook off chicken and sausage drain and save. Saute onion, bell pepper in oil/bacon drippings in large skillet over medium heat 8-10 minutes or until tender. Add corn, tomato, sausage, chicken stirring often, 15 minutes. Stir in green onions and Cajun seasoning. Cook 5-7 minutes. Yields 6 servings.
