Red Quinoa and Edamame Salad with Hijiki and Ginger Vinaigrette
6 - 6oz. portions
2 cups Red Quinoa
2 cups Water
2 cups Shelled Edamame
¼ cup Small Diced Red Bell Pepper
¼ cup Small Diced Carrot
½ t. Olive Oil
2 T. Toasted Sesame Seeds
1 T. Dried Hijiki Seaweed
1 t. Peeled and Grated Fresh Ginger
2 T. Rice Vinegar
2 t. Agave Nectar
¼ t. Sambal Oelek

Combine Red Quinoa and water in a pot and bring to a boil. Reduce heat and simmer until tender and all water is absorbed. Let sit 5 minutes, fluff with a fork, and let cool. Meanwhile, soak hijiki in cold water for about 10 minutes or until soft, drain well and add to the cooled quinoa. Sauté the carrots and peppers in the olive oil and add to the quinoa. Add the edamame to the quinoa. Combine the remaining dressing ingredients in a small bowl and toss the quinoa mixture with this dressing.

Beautiful food is made from real, nutritious ingredients, is beautifully prepared, tastes great, and makes you feel beautiful. We begin with real, fresh, honest ingredients that are minimally processed and artfully prepared to ensure they contain all the taste and benefits that nature intended. We believe that preservatives, additives, artificial flavors, artificial colors, artificial textures, hormones, pesticides, over processing, and high-fructose engineered industrial things do not belong on our plates. This beautiful preparation requires caring: about the taste and quality of the finished dish, about the nutrition each dish provides, and about the diversity of dishes that make it inviting to eat it every day. The majority of people don't know what they will be having for dinner tonight. But having beautiful food in the refrigerator means not being forced to make junk food or fast food your choice. We want to make it convenient to have an amazing food in your refrigerator-whenever you need it. And on your table when you want it.
