Glazed Butternut Pumpkin:
1 Medium butternut pumpkin (Squash)
2 cups plain yoghurt
1/2 cup yellingbo olive oil
1 tablespoon honey
1/2 teaspoon cinnamon
Pinch of nutmeg
1/2 teaspoon Murray river salt flakes
1/2 teaspoon fresh ground black pepper
Wash butternut pumpkin and cut into medium size pieces removing seeds, in a mixing bowl place yoghurt and slowly whisk in the yellingbo olive oil, once combined add honey, cinnamon, nutmeg salt and pepper. Place butternut pumpkin in a baking dish and slather over the yellingbo glaze then bake in a preheated oven to 350 degrees till pumpkin is tender 20-25minutes.
