Oat Bran Wheat Bread
Ingredients:
- 1 tablespoon yeast
- 2 cups warm water
- 2 cups warm almond milk or soymilk (or 1 cup of each)
- ¾ cup melted butter
- ¾ cup honey
- 3 cups white wheat flour
- 3 cups steel cut oats (2 of those cups pulverized)
- 3 cups All Bran Cereal (2 of those cups pulverized)
- 1 ½ tablespoon salt
- In a large bowl, combine the yeast, warm water and warm almond/soymilk. Mix well and let sit a couple of minutes.
- Add the melted butter and honey and mix well.
- Add the 3 cups of white wheat flour and mix well.
- Add the 3 cups of steel oats and mix well.
- Add the 3 cups of All Bran cereal and mix/knead well.
- Add the salt and mix/knead well.
- The dough will be moist. That's okay, it should be. Continue to mix well/knead for 2-3 minutes right in the bowl by stirring.
- Let the dough rise an hour. Punch down.
- Generously butter two 9" loaf pans.
- Separate the dough into two sections and put each section into the loaf pans.
- Preheat the oven to 350 degrees.
- Place loaves in a hot 350-degree oven and bake for 50-55 minutes.
- Make sure the oven is hot when you place the breads in.
- Let the bread cool in the pans for 10-15 minutes and then remove, turn on sides (or put on a rack) and let cool for 30-40 minutes before slicing.
- ½ cup of melted butter (Smart Balance for Vegans)
- ½ cup of honey
- 1 teaspoon cinnamon (or more or less according to taste)
- ½ teaspoon cayenne pepper (or more or less according to taste)
- Combine ingredients in a bowl big enough to dip slices of the bread into.
- Dip both sides of the bread into the coating and place in a hot skillet coated with melted butter.
- Cook to desired brownness and flip. Cook to desired brownness.
- Remove from skillet when completed.
- This bread is fabulous! As it sits the outside becomes crisp and the inside stays soft.
- Cover with desired fruit, if you choose, for an absolutely 100% healthy breakfast.
