Hearty Egg Salad
- 4 eggs, hard boiled, peeled and chopped
- 2 tablespoons red onion, minced
- 1/4 cup celery, minced
- 2 tablespoons mayonnaise
- 1/2 teaspoon dry mustard
- 1 teaspoon dijon mustard
- sea salt and freshly ground pepper
- Mix together all ingredients and serve on crackers or in whole wheat pitas lined with lettuce.
