Recipe: Hearty egg salad

Hearty Egg Salad
Serves 4


  • 4 eggs, hard boiled, peeled and chopped
  • 2 tablespoons red onion, minced
  • 1/4 cup celery, minced
  • 2 tablespoons mayonnaise
  • 1/2 teaspoon dry mustard
  • 1 teaspoon dijon mustard
  • sea salt and freshly ground pepper
  1. Mix together all ingredients and serve on crackers or in whole wheat pitas lined with lettuce.
